From the nearby sleepy beach town of Lennox Head, Ellie Bullen is one globetrotting goddess who's moto is "EAT MORE PLANTS" (I couldn't agree more) and the epitome of wanderlust.
When this dietitian is not in some of the best cafes worldwide, she is busy creating her own magical recipes using seasonal food from all over the world (and not to mention taking her own photos!). She is "basically vegan with the aim to live by a plant based diet, thriving off fresh fruits and vegetables, legumes, nuts, seeds and grains, yet also enjoying all things in moderation."
I had the absolute pleasure of chatting with this humble yet adventurous natural beauty via email... me in Byron Bay and her in Sri Lanka. And this is pretty much the Q & A ...
Fav style of food?
I really love a big rainbow salad, something fresh and colourful but also full of flavour. I am loving having tempeh, avocado, brown rice, mushrooms and leafy salads.
Is there anything in particular you don't go a day without?
There is definitely one thing I have everyday without fail! My balinese dragon smoothie (recipe on her blog HERE). I literally have it every morning! Other than that, I usually have a big salad for linch and a tempeh veggie stir fry with peanut sauce for dinner. It also depends on where I am travelling and what healthy vegetarian food is available.
Has there been a stand-out travel foody destination for you?
Definitely Bali. I am currently living here because it is so incredible. There is so much healthy vegan food and it all looks amazing! And has inspired me to create more of my own recipes which I will be doing soon.
Who do you travel with?
Mostly my partner, Alex and sometimes with my sister, Lauren and her partner Jack.

Lastly, do you have any daily beauty essentials?
I don't use alot of product but I always keep some coconut oil in me to keep my skin hydrated and use a natural facial oil and cleanser to keep my skin clean and hydrated and when travelling, I always make sure to pack my sunscreen to keep my face, shoulders and chest protected.
